BBQ Chicken Pasta
250g pasta
2 tbsp oil
1 red bell pepper (diced)
2 chicken breasts chopped into 1" chunks
1 tbsp plain flour
2 tsp smoked paprika
1/2 tsp cayenne pepper
pinch of salt and pepper
2 tbsp tomato puree
250ml chicken stock
100ml BBC sauce
Cheddar cheese (grated)
2 spring onions (chopped)
Cook the pasta and set aside
In a large pan add the oil over a medium heat, add the red pepper and fry lightly browned
Add the chicken and fry until browned
Stir in the flow, paprika, cayenne pepper, salt & pepper, fry for 1 minute
Add the tomato puree, stock, BBQ sauce and allow to bubble for 10 minutes
Add the cooked pasta and mix well
Serve with spring oninons and cheese
