Ginger Cake
8 oz Plain Flour
1/2 tsp salt
2 tsp Ground Ginger
1/2 tsp Bicarbonate of Soda
1/2 tsp Baking Powder
1/4 tsp Mixed Spice
2 1/2 oz butter
4 1/2 oz Soft Brown Sugar
4 1/2 oz Black Treacle
4 1/2 oz Golden Syrup
150 ml Milk
1 Egg (beaten)
Zest of 1 Lemon (grated)
Pre heat the oven to 160°c (320f)
Sieve together all the flour and other dry ingredients
Gently melt the butter, sugar, treacle, and syrup in a large pan
Add the dry ingredients to the melted mixture along with the milk, egg, and lemon. Mix well
Pour into a 2 1/2lb loaf tin and bake for 45 minutes
Store in an airtight container.
