Mini Glazed Lemon Loaf
3 tbsp butter or margarine, melted
1/3 cup sugar
1 egg
2 tbsp sour cream
1 tsp lemon zest
1/4 tsp lemon extract
1/2 cup all-purpose flour
1/4 tsp baking powder
1/4 tsp salt
1/2 cup confectioners' sugar
2 tbsp lemon juice
Preheat oven to 350°F. Lightly spray 5 3/4"x3" pan with vegetable pan spray
In a small bowl, combine flour, baking powder and salt
In medium bowl, combine melted butter, sugar, egg, sour cream, zest and extract; whisk thoroughly
Gently fold in flour mixture, mixing only until incorporated
Pour batter into pan and bake 28-32 minutes or until toothpick inserted in center comes out clean
Cool cake in pan on cooling rack 5 minutes; remove from pan. Cool completely
Combine confectioners' sugar and lemon juice; drizzle over top of cooled loaf
